Bulgarian national cuisine is tempting and attractive even to visitors from countries which are famous for their longtime culinary traditions. Using recipes preserved for centuries, it was enriched with mid - European and Oriental influence and today is a cuisine with its own image and taste. One major specific feature of Bulgarian cuisine is the abundant use of vegetable (fresh or conserved), cheese and yoghurt. Thermal processing of meat, usually lamb or pork is on low heat, mainly using plant oil. Meat roasted on an open grill is undoubtedly most popular. Widely used are onion, garlic and some piquant spices. Together with the main meal white bread is served. The list of desserts is various - from fresh fruit to Oriental sweets.
